Choose your protein
Turducken
Full or half
Temp – Pre heat oven temperature to 180 fan forced.
Time – 1 hour first kg then 40 mins per kg after that
Full – 3 hours
Half – 1.4 hours
Remove from oven and rest for 10 – 15 mins covered with foil. Then carve and serve
The internal temperature should be 75º
turkey
Whole Bird, Buffet or Rolled
Temperature
Pre heat oven to 180º fan forced.
Time
40 minutes per kg at 180º
Example
Size 40 – 2 hours and 40 minutes at 180º
Remove from oven and rest for 15 – 20 minutes covered with foil. Then carve and serve.
Internal temperature should be 75º
Pork
Rolled loin
Temp – Pre heat oven to 220º Fan forced.
Time – Make sure crackle is dry, pat dry with paper towel if needed. then add salt and oil.
Cook roast at 220 for 30-40 minutes or until rind crackles. Then reduce heat to 180 and cook for 45 minutes per kg.
Remove from oven and rest for 10 – 15 mins covered with foil. Internal temperature should be 65 degrees. Then carve and serve
Leg or shoulder
Temp – Pre heat oven to 220º Fan forced.
Time – Make sure crackle is dry, pat dry with paper towel if needed. then add salt and oil.
Cook roast at 220 for 30-40 minutes or until rind crackles. Then reduce heat to 180 and cook for 45 minutes per kg.
Remove from oven and rest for 10 – 15 minutes covered with foil.
Internal temperature should be 65 degrees. Then carve and serve
Tip – Pork shoulder has a bit more fat running through the meat and the leg is a bit leaner. Therefore the leg can be overcooked a lot easier, so keep an eye on it. Shoulder is good for spits or novice cooks.
Belly
Temp – Pre heat oven to 220º Fan forced.
Time – Make sure crackle is dry, pat dry with paper towel if needed. then add salt and oil.
Cook belly at 220 for 35 – 40 minutes or until rind crackles. Then reduce heat to 180 and cook for a further 25 minutes.
Remove from oven and rest for 10 – 15 minutes covered with foil. Then carve and serve
Beef
Topside or Boalr
Temp – Pre heat oven temperature to 180 fan forced.
Time
Rare – 30 mins per kg
Medium rare – 40 mins per kg
Medium – 50 mins per kg
Well done – 60 mins per kg
Remove from oven and rest for 10 – 15 minutes. Then carve and serve.
Ribs
If cooking them in the oven, cook for 3 to 3.5 hrs at 140 degrees covered. Then uncover and turn oven up to 180 for about half an hour. That will get them crisp and they should be falling off the bone.
lamb
Boned & Rolled or bone in
Temp – Pre heat oven temperature to 180 fan forced.
Time per 500g
rare – 20-25 mins
medium – 25-30 mins
well done – 30-35 mins
Remove from oven and rest for 10 – 15 minute. Then carve and serve
Example – A 2kg roast cooked medium will need approximately 2 hours at 180.
Chicken
whole Bird or boned & rolled
Temperature
Pre heat oven to 180º fan forced.
Time
1 hour per kg at 180º.
Example – Size 20 roasting chicken will need 2 hours at 180º or until golden brown.
Remove from oven and rest for 10 – 15 mins covered with foil. Then carve and serve.
