Beef Burrito Bowl

The backbone of any good Mexican recipe is lean and well-seasoned meat… cue our 100% Australian grass-fed beef strips. Lean yet tender, they provide the perfect vessel for the iconic Mexican flavour that makes this burrito bowl taste SO good.
Combine them with a punchy, colourful salsa, creamy guacamole and a sprinkle of quality cheddar and you’ve got yourself one tasty meal!

Ingredients
FOR THE FILLING
- 500 grams of beef strips
- 1/2 a white onion
- 1 can of black beans
- 4 cloves of garlic
- 1 sachet of taco seasoning
- 2 cups of rice
FOR THE SALSA
- 1 can of corn
- 2 tomatoes
- 1 red onion
- 2 handfuls of coriander
- 1 lime
FOR THE GUACAMOLE
- 2 ripe avocados
- 1 lime
- salt & pepper to taste
Cooking Method
- Cook 2 cups of white rice according to packet instructions.
- Saute onion, followed by beef, taco seasoning and fresh garlic. Add the black beans to the filling and allow the filling to simmer on low heat for 5-10 minutes.
- Dice tomato and onion for the salsa, place in a bowl with the canned corn and top with fresh lime, coriander, salt and pepper.
- Mash avocado in a bowl with lime and season with salt and pepper to taste.
- Plate elements in sections in a large flat bottom bowl.
- Top with grated cheese and enjoy!
