Powerhouse Lettuce Leaf Burrito – Steve Moxon

This Powerhouse lettuce leaf burrito is what the two-time world champion Steve Moxon eats for lunch or dinner when cutting before a competition. Using fresh premium grade beef mince from A Cut Above Family Butcher.

Ingredients

250g Premium Beef Mince
200g Red Kidney beans
1 Grated Zucchini
1 Grated Carrot
1/4 Red Capsicum Diced
Cos Lettuce Cups

GUACAMOLE
50g Chobani Greek Yoghurt
80g Avocado
Freshly Crushed Garlic
Dash of Lemon or Lime juice

Cooking Method

Heat a large non-stick frying pan over medium-high heat. Add mince to pan and cook until brown. Add the beans and other vegetables and reduce heat. Stir until veggies have softened (Add small amount of water to frying pan if needed).

Combine Guacamole ingredients in a small bowl. Mash avocado with the back of a fork to desired consistency.

Serve in cos lettuce cups.
