Slow Cooked Mexican Chicken

Cooking Time: 6 hours

Ingredients
- 600 g Boneless Chicken Thighs
- 1/2 Lime – Juice
- 1 red onion
- 1 small Green capsicum
- 1 small Red Capsicum
- 1/4 cup roughly chopped Coriander
- 1 can Diced Tomates
- 1 packet of favourite taco or burrito seasoning

Toppings
- Sour Cream
- Refried Beans
- Avocado
- Lime Juice
- Coriander
Cooking Method
Dice your red onion, red and green capsicums. Roughly chop your coriander.
Add all chopped ingredients into slow cooker pot, add lime juice and diced tomatoes. Add chicken and top with seasoning.
Cook on low for 5 to 6 hours.
Cook rice. Follow instructions on the packet.
Add toppings to serve.
