This could definitely be done in about 20 minutes over the stove. However, there is just something extremely satisfying about getting other chores done while also cooking dinner.
- 1kg Diced Chicken Breast
- 3 Cloves Garlic – diced
- 4 heaped tbsp Sundried tomato pesto
- 1 cup sundried tomatoes
- 1 1/2 cups chick stock
- 400g pasta
- 270 ml cream
- 120g spinach
To your slow cooker add diced chicken, diced garlic, pesto, sundried tomatoes, and chicken stock. Cook on high for 2.5 hours.
Add in your pasta and give it a stir. You want the pasta to be just covered with liquid, so add a little more stock if needed. Cook for a further 1 hour.
Once pasta is cooked stir in your cream, if its too runny add a corn starch slurry to thicken the sauce. Add spinach and stir though, the spinach will wilt after a few minutes of stirring. Add salt and pepper to taste.
Serve with parmesan cheese.
